idk if i posted this right but sudocats!!
I really have to step up and remember to do this on Sunday. Guess I'm still a little shaken about the rewards debacle. Then again, I don't know how much you guys get out of this anyways - but I enjoy rewarding people.

My favorite dish is what I like to call pepper pasta. Super simple: fettuccine, 1 bell pepper, half an onion, garlic, black pepper, parmesan cheese, and broccoli if you want more veggies. Slice the onion, pepper and cut the broccoli up, and saute, meanwhile boil the water for your pasta. Black pepper and garlic to taste (I always add lots), and sometimes do some basil and red pepper flakes if I feel like it. Save some pasta water before you drain it and add it to the peppers along with the cheese (also to taste) and then the noodles and then youre done! Filling, and I deem it healthy because of the veggies :)

my current easy weekday fave is Tuscan chicken!
2 Chicken breasts
1/2 Onion
4 Garlic cloves
1 punnet Cherry tomatoes
1 1/2 cups Double cream
Parmesan
(spices/seasonings inc in recipe)
Basically season chicken breasts with salt. pepper, smoked paprika, chilli flakes, oregano & garlic.
Heat up a pan and sear the chicken until there's a good colour on both sides then set aside on a plate. They will finish cooking later dw!!!
Add onion and garlic to the pan and cook until soft, add cherry tomatoes (halved)
then deglaze the pan with some dry white wine (or chicken stock is ok!)
pour in about 350ml of double cream, and add grated parmesan.
Add washed, chopped spinach stirring until it wilts.
Add chicken back into the pan, let simmer for 10 mins or until chicken us cooked through

Oh I like that because you could probably eat it with a lot of sides like pasta, mashed potatoes, etc. I'm always looking for new dishes this sounds yummy!
