Kind of embarrassing to admit but I am actually starting to enjoy some of the shows my toddler is watching. It's simply because they have some occasionally funny lines.
For example:
"I have a good mind to leave Ben as a hat just to teach you a lesson."
and
"Now what's rat for "please leave"? Oh yes! Ahem... GET OUT OF MY KITCHEN!"
and
"Is it a really clever idea?"
"No, it's stupid. But it's funny."
-from Ben and Holly's little kingdom

"Ugh, this mirror doesn't bring out my natural beauty."
"I don't think a mirror like that exists."
"Then you'd better find me one."
and
"Turn Mr Cedric back to normal."
"Was he ever really normal to begin with?"
-from Princess Sofia (No pushing gender stereotypes in my house :p)

On hearing this lines and others like them, I find myself laughing out loud with real amusement. There are a couple of other shows with funny bits in them too. This isn't just me is it? I'm not regressing in intelligence from watching these things with my son, am I? For now as long as I am not yelling 'Again, again!' at the TV when he's watching Teletubbies I think I'll be ok.

You're not alone in this. I've actually heard that it's done on purpose by writers of children's entertainment. They often throw in a few jokes that either might go over the child's head or that can be universally enjoyed. Part of the reason that they do this is because a parent is more likely to foster an interest in a particular film or show if they don't find it insufferable themselves. They also make it somewhat amusing for adults because they aren't sadists and they know they'll often be stuck watching the material with their children.

I do, but i recently don't watch them. I'm more into the old cartoons like powerpuff girls, scooby doo, billy and mandy, the wild thornberry's, etc.

I totally get that. I don't have kids of my own, but I'm the oldest in my family, and I have siblings who are 3 to 5 years old, so I babysit a lot. When Sofia comes one, I just can't look away. Kids shows are so mesmerizing

Oh I adore Avatar the last airbender. My all time favorite cartoon (that isn't a traditional 'anime'). Yeah I had the same with Korra. Although I liked the risk they took when the show was taken off the air, it just didn't have the same avatar feel to it. Obviously it wasn't going to be the same but like nearly all sequals it didn't stand up to the original.

I like animation. I can't really say cartoon at the moment, as the industry went through a shift a few years back where everything had to be more like Sponge Bob and I can only handle that in 15 minute doses.

Also, don't beat yourself up for liking children's shows. The design ethos of the best ones are to make programming that entertains the entire family, and often slips in jokes targeted at adults that is intended to go over younger children's heads. 
I suppose part of the reason I didn't grow out of them like I was 'supposed to' is the combination of Tiny Toon Adventures, Batman Animated, and Sonic SatAM all hitting in the same 2-3 year period I was supposed to be paying attention and getting ready for high school.

As for current series I rather like, I would say I like Dora & Friends, MLP:FiM, and Rick & Morty. One's completely insane, one's extremely character heavy, and the last is Rick and Morty.

Can I become Prime Ximbo more than once?
Yes ­ a Ximbo can hold the position of Prime Ximbo for 6 terms max.

The Fashionable Republic of Ximboland holds elections every 3 months for Prime Ximbo and every 3 months for State Ministers.
