Congratulations Ximboland on embracing one of the most important, and arguably most enjoyable, aspects of life, food!
Specifically this most delicious Mexican dish ximbo!

Doesn't this look sooooo delicious?
I personally have never had the ximbo dish specifically but it looks amazing, I might make it at some point!

I love meaty dishes and there are so many other Mexican dishes I would love to try, I think elotes would be an easy one to make, as for the dishes I DID have, I'd say nachos, tacos, and enchiladas are definitely a favorite (boring ik but I haven't had the chance to try THAT many dishes yet!)

Anyway, whoever wants to share their favorite food dishes (doesn't have to be exclusively Mexican!) can leave one (or more) posts in the thread! If you want to share recipes as well that'd be especially stellar!

Ximbo Xambina here is all but ready to dive into the kitchen and start cooking up some delicious meals to celebrate!

Let me share one of my own favorite nacho recipes here!

Nacho casserole with pulled chicken
Ingredients (feeds 3 people)
1 bag nacho chips natural
2 chicken breasts (300 gr)
50 gr grated cheese
1 bell pepper
2 tablespoons BBQ sauce
2 tablespoons ketchup
1 red onion
1 small can of corn (150 gr)
250 g mushrooms (sliced)
6 cherry tomatoes

Preparation
Preheat the oven to 230 degrees Celsius (with grill if possible). Bring a pan of water to boil and cook the chicken breasts in it for about 15 minutes. Meanwhile, chop the onion and the bell pepper into pieces. Fry it in a pan with a little oil. Then add the mushrooms and season with a little salt and pepper.

Remove the chicken from the pan and pull apart with two forks so that you have pulled chicken. Mix the BBQ sauce and ketchup through the chicken. Spread half of the nachos over the bottom of an oven dish. Place the fried vegetables and pulled chicken on top. Drain the corn and divide about half over the vegetables and the pulled chicken.

Cover the dish with the remainder of the nachos and sprinkle with the remainder of the corn. Cut the tomatoes into quarters and divide over the nacho casserole. Sprinkle with cheese and grill the casserole in the oven for 8 minutes until the cheese has melted nicely.

Tip: Delicious with sour cream.

I, personally, don't eat Ximbo due to being vegetarian. But Latin America has a lot of vegetarian dishes. I have always loved beans, from refried beans to "Gallo pinto" (the term for rice & beans in Nicaragua & Costa Rica & possibly elsewhere). Beans are also good in sandwiches, like Tortas.
I am also a fan of plantains, such as tostones.
Lastly, if you are ever in Latin America, I recommend trying cacao juice. This is nearly impossible to find anywhere else. It is not chocolate-y at all. It is not made from the chocolate beans but rather the pulp of the fruit.

that recipe sounds good, probably exacerbated by the fact that i'm v hungry atm 

while i don't have a favourite food, there are many mexican dishes i'd like to try, as long as my chronic gastritis allows it :')

ximbo looks tasty, so i don't really mind it being the new theme of this webbed site.

Well, I LOVE quesadillas, they’re absolutely delicious, I wish I could eat quesadillas everyday lol, but because I have a sweet tooth, I want to try these rock chocolates I saw once! I can’t wait to be able to travel to Mexico someday, or to buy them off Amazon lol, so I can put them at a nice table at a party (when parties are allowed again) so everyone is like “Huh, rocks” and I will be like “they… rock lol”

There’s this amazing steak with cheese and black beans, I tried it once and I really wish I could have one again, it was such a long time ago, I’m sure the restaurant isn’t there anymore TTnTT but that was delicious as hell.

short story time i guess: 
probably around 2007-2008ish, i was offered chapulines at school (the teacher's wife was mexican and had brought some along). i refused to try them and regret it to this day. moral of the story: accept the grasshopper.

but seriously, if anyone has tried them or any other edible insects, what did you think? if not, would you eat em?
