Nacho casserole with pulled chicken
Ingredients (feeds 3 people)
1 bag nacho chips natural
2 chicken breasts (300 gr)
50 gr grated cheese
1 bell pepper
2 tablespoons BBQ sauce
2 tablespoons ketchup
1 red onion
1 small can of corn (150 gr)
250 g mushrooms (sliced)
6 cherry tomatoes
Preparation
Preheat the oven to 230 degrees Celsius (446 degrees Fahrenheit) (with grill if possible). Bring a pan of water to boil and cook the chicken breasts in it for about 15 minutes. Meanwhile, chop the onion and the bell pepper into pieces. Fry it in a pan with a little oil. Then add the mushrooms and season with a little salt and pepper.
Remove the chicken from the pan and pull apart with two forks so that you have pulled chicken. Mix the BBQ sauce and ketchup through the chicken. Spread half of the nachos over the bottom of an oven dish. Place the fried vegetables and pulled chicken on top. Drain the corn and divide about half over the vegetables and the pulled chicken.
Cover the dish with the remainder of the nachos and sprinkle with the remainder of the corn. Cut the tomatoes into quarters and divide over the nacho casserole. Sprinkle with cheese and grill the casserole in the oven for 8 minutes until the cheese has melted nicely.
Tip: Delicious with sour cream.
Iced Tea
Ingredients
1.5L of water
6 teabags (any preferred flavor, English blend for standard)
2 tablespoons of sugar
1 tablespoon of liquid honey
Lemon juice to tastePreparation
Boil 1.5L of water, once boiling turn off the heat and pour in the sugar, honey, and steep the teabags for 10 minutes or to your own preference
Once steeped strain the tea (I personally skip this step and the tea still turned out fine so it all depends on if you want tea residue on the bottom or not) and let it cool, then place in your fridge to cool down further, you will be left with about roughly 1L of tea after evaporation
Once the tea has cooled down completely add lemon juice to your preference
Add any preferred ingredients if you have them such as lemon slices, orange slices, mint leaves, flavoring, etc. (not included in the price list)
Casserole with Bugles (feeds 3 people)
Ingredients
1 bag of Bugles 125 gr
160 gr (vegan) chicken
1 bell pepper
1 small can of corn
1 red onion
130 g black beans (drained)
pinch cumin
pinch paprika powder
pinch salt and pepper
2 tablespoons salsa sauce
300 ml sieved tomatoes
75 gr grated cheese
Preparation
Preheat the oven to 170 degrees Celsius (338 degrees Fahrenheit). Finely chop the onion and sauté in a pan. Add the (vegan) chicken in pieces. Cut the bell pepper into small cubes and also fry in the pan.
Add cumin, paprika and a pinch of salt and pepper. Drain the corn and beans and add to the pan with chicken and peppers. Add the sieved tomatoes and the salsa sauce. Let the mixture simmer for a few minutes.
Place the sauce in an oven dish. Divide the Bugles on top and sprinkle generously with cheese. Gratin the oven dish briefly in the oven (5 minutes) until the cheese has melted nicely. Make sure the Bugles don't get dark. Garnish the Bugles dish with some spring onions and extra corn.
